The humble Beetroot Thoran

There ain’t no red like beetroot red!

Beetroots are a powerhouse of vitamins and minerals, and are quite versatile! You could juice it up, boil it, make a salad out of it or dish out a mean thoran (vegetable curry/sabzi), just like the Malabaris do it! 😀

Here’s the recipe of the delectable beetroot thoran!

Ingredients:

2 onions

2 beetroots

2 green chillies

2 dried red chillies

a sprig of curry leaves or kadi patta

turmeric powder

a teaspoon of mustard seeds

a teaspoon of urad dal (split and dehusked black gram lentils)

grated coconut

coconut oil

salt

Method:

Heat coconut oil in a kadhai or a wok

Put in some mustard seeds and allow it to splutter

Add in the green chillies, red chillies, curry leaves and the urad dal

Now, wait patiently until the urad dal turns slightly brown

Add in the chopped onions, allow the onions to turn brown (to fasten the process, add some salt), put in some turmeric powder and give it a good mix

Next, add in the chopped (you could also shred it instead) beetroot, some salt, mix it well and allow it to cook in a low to medium flame

Keep checking, stirring and tasting 😉 at regular intervals (this would help you figure out if the dish is ready)

Add some grated coconut, mix it well and you’re good to go!
